How to Pick the Right Meat
Look for the marbling. Marbling is the small white flecks of fat found within the beef. It is distributed unevenly throughout the body, with more appearing towards the neck, and less towards the tail.
Research indicates that marbling has a very positive effect on the eating quality of some cuts, particularly the loin cuts such as the rib eye and T-bone. Higher levels of marbling correlate to better flavor or juiciness. Marbling however, does not guarantee tenderness.
